Then I need to get new seats which are yellow and while and black too, unless I just stick with regular yellow.

Option NONE. I can't see any of them.

I got my seat covers for about $50 (EBay)or you can go to a fabric store and buy some vinyl. I did that with my '03 and it looked pretty good!
