If you need a real sportbike, the ZX10R and GSXR1000 both offer pretty decent legroom. The older ZX9R is great, if you can find a clean one.
If you can stomach a sport-tourer, check out the VFR or a ZZR1100 or 1200. If you can live with a naked, the ZRX1200 is awesome.

or you can get an 05-08 ZZR600... it's the old ZX6R from 02... the little bro of the ZX9... still plenty of room and all day comfort... rode that 4200 miles of a 5000 mile trip... before I looped it
